I have also been interested in coming across so many naming of the Gyoza, please see if the following clues make any sense to you?

In Chinese (mandarin), it is pronouced as jiaozi, close to gyoza or gyozi we commonly see on the web.

Pot-stickers, probably refers to the way of cooking jiaozi by pan-frying.

Dumplings, the English term for jiaozi.

I'll admit, it took a bit of time to wrap each one individually... probably about a minute each, so wrapping 35 or so for this recipe took around a half an hour. I guess it's not that long. Total time before freezing was probably about an hour and a half, including the 30 minutes that the zucchini sits in salt (if you prep the other ingredients in the meantime). Worth it? I'd say so. I mean, they're definitely way better than store bought gyozas. Add in the rewarding factor of having made something yourself and the ability to change it up to your liking... Yeah. Totally worth it.
