Diabetics are catching on to lowering their carbs to keep blood sugar in control, and substituting zucchini for pasta is now becoming popular and well known. Thanks for a great recipe.

I will preface this with I LOVE pasta!!!! Tried zucchini lasagne for the first time and couldn’t tell that it wasn’t pasta…delicious!!!!

Can't WAIT to give this a shot..recently discovered some Wheat allergies...so this looks great (and we have some killer monster zuchs in the garden). Also...might experement with different cheese, as the lactose thing can be a pain..

Love this idea and since, like m (the commenter above), I'm not a big fan of grilled zucchini, this looks like something I'd try.

I hate zucchini and usually bake with it but this looks like another excellent idea! I made a similar dish with eggplant in place of the pasta this summer when faced with an excess of that, too.

I think this is a BONZER of an idea! I don't care much for pasta anyways and this is it! I have copied it and will make it. Of course, I'm like you and have way too many zucchini this year. i got a little excited about having a garden this year. ;o) Come check out my post on an amazing chocolate zucchini bread and my plight with zucchini too.
